Some put metal sheets and use magnets to hold down. And cover with cardboard paper on top and put masking tape on the seams if table is bit big. I use my shears, staple gun or anything that has weight to it.
I bought an 18" section of railroad track. Heavy stuff.
Had it cut down into four 3" pieces & one 6".
Cleaned 'em all up, smoothed out the rough, sharp corners & edges & then sprayed with some clear.
Can be used standing or on their sides.
They make great mini-anvils, too.
Watch your toes when they fall off of the bench.
I use a few bags of #4 bird shot in some scrap mattress ticking and some lead diving wieghts with vinyl covers to keep the lead from rubbing off. I like the bird shot because it will mold to the shape you need
My pattern table is topped with 1/2" drywall and a layer of 1/4" foam on top of that, then topped with vinyl. When I lay patterns out I us 3/8 staples through the selvage. Works great. But when I don't have selvage to I have a couple maul heads and magnets of various sizes
